Goodie-Packed Food 1

On Friday I talked about one of my new goals: to learn about the goodies our body needs and where to get those goodies.  Another part of that goal is to learn about goodie-packed foods and new ways to cook with them.  Goodie A was Vitamin B12.  At the same time that I tackled B12, I also decided to Kale.  Meet goodie-packed food 1 (GPF1).

(Please do remember that anything I write about these Goodies is the result of my research that wasn’t always the most extensive and was done to serve my needs, and no one else’s.  If I’m wrong about any of my findings, I welcome polite correction!)

I ended up with kale after finding a recipe on Cara’s Cravings for Sweet Potato, Black Bean, and Kale pizza on Polenta crust.  Being that I love sweet potatoes, black beans, and pizza I was intrigued how that plus kale plus polenta (and what exactly is a polenta crust) could all come together to be the delicious meal she was claiming it to be.  I instantly Pinned this recipe and marked it down as a must-try (another goal of mine—actually create the things I pin).  Remembering that my mom was always trying to shove kale down our throats I figured there must be something to this mysterious green veggie.

When I began reading about kale I learned that is chock full of goodies, particularly protein and fiber.  Some facts on kale (source):

Wowzers.  No wonder my mom was always putting it in soups.  Kale is delicious in soup but soup isn’t my favorite thing to cook.  Don’t get me wrong, I love soup.  But I’ll have one or two bowls and then I’m pretty much done.  It isn’t something that I’ll eat as a leftover (and I’ll eat most everything as a leftover) so I knew that I couldn’t rely on incorporating kale into soup as a good way to get some of it in my life.  Enter the pizza.

Oh sweet mother of pizza.  Cara was on to something when she crafted this bad boy.  Read her story on how and why she developed it and get the recipe here.  Cara cracked eggs on top of her pizza to be part of the Eggland’s Best Pink Party she was giving, but being that I had no eggs on hand my pizza was sans les oeufs.  This pizza was so magically foodgasmic that I know I will be making it over, and over, and over, and over again.  Maybe I’ll even try it with the eggs sometime.

Some notes on the recipe.

-          It isn’t difficult but there are a lot of steps.  Plan ahead.  Cara mentions which items can be made ahead, like the sweet potatoes and the crust.  If you are planning this for a party or are short on time the day you’ll be making it, definitely make those two ahead of time.

-          The polenta crust might seem crazy and weird but it is actually quite delicious.  I had never had that before and now that I have I know I will be using it in multiple ways.  I love spinach, tomato slices, and pesto pizza so I think that will be my next adventure with the polenta crust.  It’s a great alternative to a traditional wheat crust if you’re gluten-free or try to be (like me).

-          Kale, like other green leafies, significantly reduces when cooked.  I totally could have added all of the kale to this pizza.

-          Don’t be scared by the weird combination of ingredients because they go together beautifully.  The polenta crust and sweet potatoes add sweetness while the kale and black beans tones it down.  I was nervous about the green chilies because I am ridiculously sensitive to heat spice and I should have added all that the recipe calls for.  My pizza lacked the heat that the chilies would provide.  I’ll totally be adding more next time.  If it’s too much heat for me I can just pick them off.

-          Be prepared to fight over this.  Fortunately I live alone and didn’t have to worry about anyone swiping my servings.  But I actually felt bad that I wasn’t sharing this deliciousness with anyone.  Next time I make it I’ll have to invite some eaters over.
